Ingredients and Preparation
IngredientsMeasuresLo mein noodles (or whole wheat linguini)4 ouncesCanola oil2 teaspoonsGarlic, minced2 clovesBoneless lean pork chops, sliced into 1/2” shreds½ poundBroccoli flowerets½ cupSmall red bell pepper, sliced into ¼” strips1Mushrooms, sliced½ cupScallions, sliced2Low-sodium soy sauce2 tablespoons
  • Directions
  • Cook noodles according to package directions, omitting salt and fat. Drain and set aside.
  • Heat oil in a medium skillet or wok over medium-high heat. Add garlic cloves and cook for 1-2 minutes, until garlic is tender. Stir in pork and cook 2-3 minutes, until it begins to brown. Stir in broccoli, pepper, mushrooms, and scallions, and continue cooking for 6-8 minutes, until vegetables are tender and pork is cooked through.
  • Turn off heat, add soy sauce, and toss with noodles. Serve immediately.
